Ladurée :: Réglisse (Licorice) Macaron

Happy Halloween, everyone! I really wanted to showcase a piece today that was at least quasi-Halloweeny, so I thought long and hard about what to share. My first instinct was to pop up something from Arnaud Larher, because most of his work is so tacky and disgusting that it’s ******* terrifying. But I ruled that out, because it just seemed unnecessarily sadistic. Then I thought maybe I should post something that’s mostly orange, but all those pastries have apricots, peaches and mangos; awesome – but not seasonal enough. All of a sudden, Ladurée’s Macaron Réglisse sprang to mind. Not only was the flavor a-seasonal enough to work, but the shell is even spookier and darker than my soul – which, coincidentally, is also made out of almond flour, egg whites and sugar. What could be more perfect?

Black macarons from Ladurée are also particularly fitting since Ladurée Champs-Elysées was left smoldering and billowing black smoke last week, presumably turning all of their macarons to a deep noir, if a bit crispier than usual. And, as I’ve pointed out to others, the fire is obviously Karmic retribution for not allowing visitors to take photos in the shop. Enacting stupid policies that crush the spirits of giddy customers = your store accidentally bursting into flames. Just saying. Anyway, let’s dig into the intentionally black Macarons Réglisse.

These are . . . fantastic. As the delicate shell gives way, and the first bite slips to your tongue, you’re graced with just a waft of réglisse. It’s very subtle. So you chew away at the tender meringue and sweet smooth caramel within, noticing that the licorice essence seems to build just a little more with every bite. The moment you polish-off the first one, your tastebuds will seem curiously haunted by even more prominent réglisse tones. Assuming you’ve purchased several – and I hope you have – you’ll keep indulging until you’re lost in a sublime licorice-laden delirium.

But I have to caution you; these are some of the most addictive macs in Ladurée’s lineup. They’re the kind you can eat 12 of in one sitting, then feel like you’re going to vomit. So you take a fifteen minute break and then keep eating some more, until you pass out from a sugar coma. Just to be clear – I’m not saying I did that one day. I’m saying I’ve done that on several occasions, and it’s a cruel and vicious – though thoroughly delicious – circle.

So, yes, if you enjoy réglisse, you’re pretty much definitely going to fall for these. They’re so good that I’m even giving them my rare “full box” recommendation, which means I advocate purchasing at least an 8-pack of this flavor alone. Too bad Un Dimanche à Paris no longer carries their far-superior réglisse macaron, or else I would have reviewed them and given the 24-pack reco.

    The satire and humor in this post is very inappropriate. I am a regular on this blog and I don't find humor in a situation where people could have been hurt. What does a restriction on taking pictures have to do with karma?

    This is my favorite flavor ever! I discovered it by a complete accident when it was part of a welcome package at a Paris hotel. Now, it is the reglisse along with vanilla and salted butter caramel that I buy. So sad that as New Yorkers, this is the one flavor we are apparently not worthy of enjoying.

    • Then I'm glad I could share it with you today. That's a bummer NYC doesn't have it . . . if for no other reason réglisse is just a cool word. I've been told that, even in France, licorice is just not as beloved as it used to be. But I thrive on strange flavors like that. Though, yes, their vanilla is also another of one of my all-time favorites from any shop.

    I'm in Lausanne at the mo and discovered a branch of Ladurée. And they had the réglisse. I bought a box of eight, with only one demonic black temptation. They certainly have a look of volcanic lavishness to them. Perhaps the filling should have been vibrant red to give it more of a Dantenesque, Inferno feel.
    Today I will be photographing them before devouring!
    I should have asked if I could take photos and I agree that why one can't photograph in Ladurée in Paris is just pure meanness.
    Love your blog, right up my street! And the Edinburgh Cake Ladies will too, I'm sure.

    • How convenient that there is a Ldauree right there. And I agree . . . they could change the interior to even look more intense. And then they can follow your suggestion and call it the Dante.

      And, yeah, them not allowing to take photos is nuts. I asked them why people can't, and they said it's because people from magazines and stuff used to take photos (bad ones) and then print them for the world to see. They hated it, so they started forbidding anyone from taking a photo that might get printed and ruin their image. I think it's a pretty silly policy, mostly because it makes people feel ashamed for wanting to take photos; not a good feeling to instill in customers.

      Oh, well, I hope you enjoyed the macarons!

    Thanks for the suggestions! Just bought a pair of réglisse macs…and a few others to try! Citron, cassis violette and fôret noire! Very nearly bought a tarte citron, as I adore lemon. Hmmm….must set out to discover my own favorite tarte citron!

    • Cassis is one of my favorites! And the Foret Noire is pretty tasty, too. They all are! lol Best of luck in the tarte citron search. Carl Marletti is a good one to try, since he won in 2009 for the best. You know I love the one at Genin. Laduree/Herme are pretty similar. And there are lots of others that are fun to try. Let me know what you discover.

  6. I happened to walk by Laduree on Rue Jacob yesterday so of course I had to go in (my first visit to Laduree), fight the tourist swarm, and get a reglisse macaron. I thought it was really delicious, and indeed it looks filled with powdered evil-your description was poetic and right on. I'm not sure I really tasted the reglisse but that was probably because I only had one rather than making myself ill with a box full as you suggested. Tempting as that was, such indulgence is beyond my budget. Still, I thoroughly enjoyed the one. Thanks for the tip!

  7. I'm very picky about which things I like licorice in but I'm going to have to give these a try. I just hope they don't leave your mouth black.
