La Pâtisserie des Rêves :: Fruitier de Saison (Mangue)

La Pâtisserie des Rêves makes me so happy and so sad all at the same time. Happiness comes in the form of their Cylan, chaussons aux pommes, brioche, Grand Cru, Saint-Honoré, and more. Sadness comes from the fact that there are so few new pieces there! While shops like Hugo & Victor or Des Gateaux et du Pain give me gems and then rip them out of my sticky paws a few months later, La Pâtisserie des Rêves just keeps offering-up the same treats for months on end. Don’t get me wrong, I love unending access to great work, but I want nouveautés . . . and I want them now!
So It looks as though there are very few Rêves pastries I’ll be showing you in the coming year. I trotted-out almost everything in 2010. I wish I could show you more, my friends, but it’s a cruel world . . . a cruel, cruel world. At least today’s subject, the Fruitier de Saison (Mangue), makes it a little less bitter.
Not unlike the raspberry version of the Fruitier de Saison I covered a few months ago, today’s creamy little dome is composed of a mound of firm lime-infused Chantilly, atop a sweet almond gateau. Nestled within are the most tender and sublimely delicious bits and pieces of mango – so perfectly textured and perfumed, I fear the involvement of the dark arts. There you are, just enjoying that first bite or two, sans mango, loving the interplay of the unctuous mousse with that modestly grainy cake, and then you get a taste of the mango compoté. “This tastes . . . unholy,” you say to yourself. “I hope no one’s watching.” And then you just jam its entirety into your face. Nom, nom, nom, nom, nom! Too delicious.
Rêves’ newest Fruitier de Saison is actually not new – it’s the raspberry again. Why couldn’t they just pick another seasonal fruit this time around? Is there something wrong with apricots or cherries? Outside of tartes here in Paris, very little gets done with apricots in pastries. All I’m saying is . . . just think about that next year around this time, ok La Pâtisserie des Rêves?
I will also accept a strawberry Fruitier de Saison that’s covered in pistachio crème, cause that would be amazing. But this was certainly delicious . . .

So, yes, even though mango season has come and gone at La Pâtisserie des Rêves, this Fruitier de Saison made for an excellent purchase. Even better was their mango tarte, which I’m saving for another day, months down the road. It’s just that stunningly awesome – a guaranteed entrant into the Top XX best pastries list I’ll draft this fall.
