Remember the last eclair you had that was hand wrapped in fine dark chocolate and flecked with gold? No? Then I don’t know what you’ve been eating all these years, but it certainly did not come from La Pâtisserie des Rêves. And if you think it’s a bit unnecessary to encase an éclair in a 70% Carúpano Venezuelan chocolate sheath, well, then I’m not going to argue. It is admittedly a bit intense. But it’s also beautiful, delicious and very well executed. Welcome to the world of avant garde éclairs, my friends…
The chocolate tunnel in which the éclair lives is actually quite tasty in and of itself. In fact, when I first sampled it, and before I’d looked up the backstory on this Rêves’ creation, I wondered aloud, “Is this Venezuelan?” Relatively mild and with the slightest grain, it’s not the embodiment of outré Venezuelan cacao, but it is quite nice. More impressively, it has a consistency perfectly on the fence between the tempered snap and one’s ability to handle it without it crumbling. I should also point out that it melts in your mouth AND your hands (this is no M&M), so keep a napkin or 20 on hand.
The éclair tucked within is sublime. Tender pâte à choux, delicate crème that’s not too sweet, and a beautiful chocolate flavor. This is in diametric opposition to the usual éclair that’s choux is either dry or rubbery and whose crème is sweetened and over-flavored enough to trigger one’s gag reflex. Not all my reviews are glowing, so look forward to me ripping a few patisseries for such culinary transgressions.
I’d definitely advise you to pick one of these up. Not only is it an excellent éclair, but La Pâtisseries des Rêves in a sight to behold – and one with more than a handful of excellent pastries on-hand.
